|2009 VINTAGE||The weather during 2009 has affected our Passopisciaro wines giving them a tense structure and a denser texture than usual. Scattered rains at the end of September and repeated in mid-October and increasing humidity prompted us to harvest earlier than the other years in each of the different owned vineyards that rise to different heights on the north flank of the volcano. This anticipation is at the origin of the particularly varietal flavors and indigenous, carnal, pleasantly obscene content, surprising because little known since this grape has been carefully cultivated and vinified on Etna. Passopisciaro's 2009 wines will undergo a pleasant aging due to the evolution of the fabric and the beautiful change that the aromas will present.
In the vinification we interpreted the musts with short fermentations, protected and frequent decanting, no maceration, large concrete containers, little rest on the lees and none on the skins. Before bottling 18 months later, all the wines had a slight clarification to preserve their most typical riches in a more successful and longer aging.
