The company is located on the north eastern side of Etna between 700 and 850 meters above sea level. in the municipality of Randazzo in the Croce Monaci district.
The overall extension is about 15 hectares of which 8 are vineyards. The vineyards, all trained as saplings, climb up on ancient small terraces built over the centuries with dry lava stone parapet walls.
The company run with the organic method is ICEA certified.
The altitude, the exposure and the particular ventilation of the place make it possible to minimize chemical treatments in the vineyard. Normally only one treatment with powdered coppery sulfur is carried out in spring.
The grapes, Nerello Mascalese and Nerello Cappuccino for the reds and Carricante for the whites, are harvested between the second and third ten days of October.
In the cellar, the vinification is followed in a natural way without adding selected yeasts and without chemicals. The wines remain in wood or steel for at least two years and refined in the bottle before being marketed.
