Junko and Shigeaki, Japanese spouses, in 2013 bought a vineyard of about one hectare in the Passopisciaro area, in the “Buonanno” district.
The vineyard is made from Nerello Mascalese Autochthonous grapes from Etna; their first harvest was in 2014 and on that occasion they decided to call their wine "Jun", a name that originates from the name of Mrs. Junko, which means "pure"; in fact, immediately their intention was to obtain a direct "child" product of the earth, genuine and sincere ... precisely pure, thus undertaking a path aimed at obtaining organic product certification over time, pursuing a production that favors quality over quantity.
The peculiar characteristics of the minerals contained in the earth of the volcano and the significant temperature range (13 ° C - 15 ° C) in the months of July and August, attributable to the elevation at which the vineyard stands, give "Jun" a gradation significant alcohol content as well as a remarkable acidity and complexity.
“Jun” spent 18 months in “Slavonian” oak barriques with subsequent refinement in tanks for about a year. Further growth and refinement finally assigned to bottling.
