The company manages 2 and 1/2 hectares on Etna, between the districts of Monte Ilice, Monte Gorna and Carpene south-east of Etna at an altitude between 720 and 840 meters above sea level.
The vineyards are about 60 years old. The white present in the vineyard is 70% Carricante and 30% Cataratto. The red variety is instead 90% Nerello Mascalese, 10% Nerello Cappuccio remaining.
2017 is a hot and dry year; 2018 humid and rainy; 2019 mild with rain in September. On the white we de-stemmed, kept the whole bunches for 4 days in HDPE tubs and finally pressed and fermented in stainless steel tanks. The red was similarly de-stemmed in whole clusters, for 12 days in contact with the skins in steel silos.
Both on the lees until April 10th. Fermentation took place spontaneously with its own yeasts without any clarification and temperature control.
