For four generations we have chosen to cultivate our vineyards following the centuries-old tradition of Etna, using very limited sulfur and copper sulphate, practicing green manuring, mulching if necessary, plowing to aerate the soil, close manual pruning, harvesting by hand.
The plants are sapling or low espalier with sapling plants and the vineyards are located on stepped terraces supported by dry stone walls. The lava soil, the strong temperature range between day and night and the high daytime solar radiation make the perfectly ripe grapes harvested in mid-October unique.
The cellar is on several levels, including the underground excavated in the lava rock which allows ideal and totally natural temperature and humidity conditions. The numerous large wooden barrels of Slavonian oak allow an aging over time as in the past and the natural precipitations of lees and tartrates. The barrels of several passages are used for refinement of small batches. Fermentation takes place on average in medium-small and small steel barrels.
